RESPONSIBILITIES OF THE ROLE Prepare and present a variety of high-quality sushi dishes, including nigiri, sashimi, maki, and uramaki, following the hotel's standards and recipes. Ensure the freshness and quality of all ingredients, maintaining strict control of fish and other product inventory. Maintain a clean, organised work station that complies with all food hygiene and safety regulations. Collaborate with the kitchen team to ensure efficient and timely service, particularly during peak hours. Participate in the creation of new sushi dishes and menus, incorporating trends and adapting to hotel guest preferences. Manage sushi supply inventory, place orders, and control waste. Ensure proper food handling and storage, adhering to food safety standards. Collaborate with other hotel departments, such as room service and events, to ensure guest satisfaction. Stay up-to-date on the latest trends and techniques in sushi preparation. CANDIDATE REQUIREMENTS Demonstrable experience as a Sushi Cook, preferably in high-end hotels or restaurants. In-depth knowledge of sushi preparation techniques and Japanese cuisine. Ability to work in a fast-paced, high-pressure environment. Excellent communication and teamwork skills. Meticulous attention to detail and food presentation. Knowledge of food hygiene and safety regulations. Behavioural Competencies Responsibility and commitment to quality. Technical Skills and Knowledge Expert knowledge of fish cutting and preparation techniques for sushi. Ability to prepare sushi rice with the proper texture and flavour. Knowledge of different types of fish, seafood, and other ingredients used in Japanese cuisine. Ability to use specialised sushi kitchen equipment and tools. Knowledge of food hygiene and safety regulations. Ability to follow recipes and presentation standards.
